Mega Sardines Quick Spaghetti

Ingredients:

  • 2 (155g) cans of Mega Sardines in Spanish Style – Soya Oil Set Aside

  • ¼ kilo spaghetti noodles

  • 1 medium-sized garlic.chopped

  • 1 medium-sized onion, chopped

  • 1 cup cherry or regular tomatoes

  • 1 tbsp olive oil

  • red pepper flakes

  • parsley, chopped

  • salt and pepper

Procedure:

  1. Cook spaghetti as per packaging instructions.
  2. Meanwhile, in a sauce pan, saute some garlic & onion in a generous amount of soya oil (from the Spanish Sardines).
  3. Add a few pieces of Sardines and leave some pieces for topping.
  4. Add the cherry tomatoes. Otherwise, diced regular tomatoes (deseeded) will do.
  5. Season with salt and pepper. Sprinkle with red pepper flakes.
  6. Let it simmer for a few minutes.
  7. Toss the cooked pasta in the sauce.
  8. Add small amount of olive oil. Sprinkle with some chopped parsley.
  9. Transfer to the serving dish. Top with whole sardines. Garnish with more parsley and red pepper flakes.
